Well if they lifted both they would fall over.
Ask them, they can talk so maybe they could answer.
They obvious find it comfortable! If they are falling asleep like that. Maybe gives the feet a good rest at end of the day.

I have noticed that they place the other leg under their head or "chin".
Maybe they need to keep their head from drooping, thus throwing themselves off balance. It does appear that the leg on the roost is almost "frozen" while sleeping.
