Because then they would have to farm mice just for that. Most cat food (I believe) is made from leftover meat not fit for us to eat. We already farm chicken and beef for our own needs, and the leftovers get made into cat food. Besides, if my cat wants to taste mouse, he goes to the field and catches one.
I think someone would have to taste a mouse in order to duplicate it. You couldn't pay me enough.

You could always make your own, all you need is some wet cat food, a mouse trap with a trapped mouse and a food processor.and mice viola!!
