Duetscher Jagdt Terriers are good all around hunting dogs, but they are fairly small. They are noted to not make good pets (strictly working dogs) and to be difficult to train.

Irish Wolfhounds are good coursers (and were originally bred for hunting and killing wolves, go figure), but they don't really kill anything. They chase it until it's exhausted and then keep it in an area until the handler catches up to finish the job. They were meant to do this in large groups, so you'd need a few of them, and they are difficult to find, expensive to buy, and extremely large, so they eat a LOT, and being a giant breed, don't live very long.

Shiba Inus were bred to hunt bear and wild boar, but again, they are small and were meant to hunt in packs, so you'd need a bunch of them and they're rather expensive and difficult for an inexperienced person to train.

Rhodesian Ridgebacks were bred to hunt lions (again, in packs, so you need more than one), and can also be difficult for an inexperienced person to train.

You might want to check the laws in whatever state your wilderness is in - in lots of places it is quite illegal to hunt certain types of game with dogs, in other places you need to have a specific license to hunt game with dogs, and some game is protected and cannot be hunted at all.

For deer hunting with a dog, you'd probably want Scottish Deerhounds. They look very similar to wolfhounds, just a bit smaller. They're sighthounds - when they see something move, they chase it, and they keep chasing it until they either get it backed into a corner or it exhausts itself.
