It's actually the reverse of what you're thinking. The dog is putting it's scent on the find, to claim it as it's own.

It's a left over trait from when they were pack animals and hunters. Its the same reason hunters spray on deer urine. They want to smell less human, your dogs want to smell less like a dog.
The real question is, "Why don't people?"
Its instinct. They do this to cover there sent when hunting for prey.
Definitely to cover up his own scent. Dogs did this when they were wild I think to be more successful at hunting (their prey couldn't smell them).
I dunno but it annoys the heck out of me! After it rains, and all the worms comes out, ya know they don't all make it back to the grass, so they die and dry out and become worm jerky... Well, my dog loves to roll on them and eat them. I stop him whenever I see him.

But, the other day my bff brought her female Pekingese over and let her play in the yard, and the next day my dog was rolling around in all the spots she had peed on. So maybe it IS about marking it with their own scent.

They think it smells good.
they like to role in dead and stiky things because in the wild, they would ahve done this to cover up their sent from other wild animals, so it is just one of the instinctuial behaviours.
May be they like to roll init.
