I think this was answered pretty well. Dogs roll in stinky stuff to mask their own scent.
The other thing is, I "think" they have fun doing it. When we go to the dog park, my dogs (all 5) can find any amount of deer poo in the park. They all take turns rolling in it. They all have the happiest smiles on their faces. All the other dogs in the park are playing. I can find mine by looking for the dogs with their legs in the air as they are rolling around.
All of them come back, very proud, smiling and happy as can be. They then get a bath. They like that too!
My husband likes to describe the smell driving home as the "warm stink" coming from the back of the truck.
Dogs will roll around in ANY kind of poo, not just fox. They are probably trying to mask their own scent from that of their prey.

Dog do rolling anything that will cover up their own scent. This way other dogs cant tell if they have been there. Other than marking their territory by urinating dogs did this to so when they hunted the prey couldn't detect them.
