Shubunkin Goldfish will get breeding stars on his pectoral fin and operculum to teel if its a boy.
The male goldfish will chase the female for a long period of time then spawn.
The other way to tell from male and female is to see if the vent concave(male), convex(female).

First, it is almost literally impossible to sex young goldfish and almost as difficult sexing adults. If you have any hope at all of this, you have to wait until the juvenile reaches breeding age (usually one year old). Second, sexing adult goldfish out of the breeding season is difficult if not impossible as well, because the sexually distinguishing features only develop during the breeding season, which is in the spring time. The only general all-around hope you can maybe, maybe make is that females may be deeper in the body than males.
As far as the physical sexual characteristics during the breeding season, the males will develop breeding tubercles (kind of look like white pimples) on the gill covers and on the leading edge of the pectoral fins and the females will have a larger, convex vent (just before the anal fin) than the males.
