I've only gotten a beta to live through about a dozen nestings.
It sounds like your beta is just winding down (much like we do in old age). the life expectancy of the beta is only about two years. You may want to consider another one soon.
Generally they live for 3-5 years which means you can expect him to live 2-4.5 after you bought him. I'd be sure to clean out his tank/bowl throughly, and be sure you aren't over feeding (see link). Adding some melafix/bettafix, or aquarisol might help.

They Live Long.
Heat the fish water up by using light or add warm water to the bowl/tank. Trust me i never had less that 2 beta fish for at least 5 years! Im an expert!
Both cold water and old age are the possibilities, You can't do much cos from your statement, you already are quite knowledgeable on betas.
