Guppies are the easiest.they self-populate, need no heater, are easy to care for, and don't cost a lot of money. IF you live in a cold area during winter, and IF the heat is turned way down during vacations in winter, you may need a heater to keep the water at least 65-70 degrees during that time. Good luck

If the kids are fairly easy to control, and you would not have a fear of them dumping food into the tank at will - then yes Bettas or Guppies are fun to start with. Both can be fairly colorful (especially the male Betta and male Guppies), but I guess a lot depends on the age of these kids in the classroom, and if it is a project to teach them responsibility for caring for a pet.

These aren't fish. but tadpoles are lots of fun! If you don't live by a pond I don't know where'd you get them. But anyway, then your class can watch them grow into frogs. All the need is a basic fish tank and they can eat basic fish food. Pinch once a day. The tank need to be cleaned regularly. When they start developing legs provide them a way to get out of the water so they can breathe. Also, when you first get them, if they're from a pond, originally fill up the tank with pond water. Then next day have it 2/3 pond water, 1/3 tap. Then 2/3 tap and 1/3 pond. Then they will be okay with tap water. When they turn into frogs just release them in a pond, preferably where they came from. If it's the right time of year you can get some more then!
I think it depends on the age of the kids. When we had fish for our 3 year olds we got goldfish or feeder fish. Both are easy to take care of and pretty cheap.
