I have had 4 betta fish and it seems as the get older they change colors. I think it means that your fish is aging. It's there way of getting grey hairs.
While damdawg is right in general this isn't true of female bettas. Beta female are always ready to mate if they are healthy. (Females will show dark banding it they are interested in a male, but that's it.) Generally bettas don't show big changes in color once they are mature.
If your betta chages color it's likely due to food or stress. A new betta from the fish store may develope new markings, or greatly deepen in color. (Due to age, and food.) After about 6 months the color, and marking should be stable.
In this case it sounds like she was sick, stressed, or not fed a balanced diet. Also remember that females tend not to have as intense colors as males. So the lighting can make a big difference. My girls who are blue can at times look grey. Also at night when they are resting they may grey out as well.
