It depends on the fish. On charcoal it is roasted very well, and remains juicy. Some fishes (small ones) are eaten fried, and some make good soup. Also I put salmon in the microwave or wrapped in bake paper in the oven, together with onion, peppers, spices, and it is very good. Or you can take cod fillets and fold them in banana leaves, with some coconut oil, and put in the oven.
I prefer it fried but it really isn't healthy.

Last night I filleted a trout and salted/peppered/chive infused olive oiled both and wrapped them in aluminum foil and poached them in boiling water. 4 1/2 minutes. Came out great!
