I don't know that there is any exact answer to that but a horse should NEVER be without water. It can predispose them to colic as well as many other detrimental things.

In 1982 a study was done in Paris, France to investigate nutrient deprivation in the horse in a warm climate. Deprived of feed but given water, the horses were capable of surviving 20 to 25 days. Deprived of water but not feed, the animals lived only five to six days. It was observed that after two days without water, the animals refused to eat and showed signs of colic. At day three, the horses becomes restless and expressed severe discomfort.

A camel can survive a long time without water because it has humps filled with water.But a horse doesn't have any place to store water.Depending on the size and activity the most you could get out of a horse is a couple days without water.

Typically, a horse can live without water for a maximum of 5 days...that is if they have feed available to them (where they will be getting a little water content). If deprived of feed as well as water, it would be closer to 3 days. Also, you would need to take into account the weather, the stress level of the horse, other outside factors, etc. The most obvious thing to happen would be that if a horse didn't have water available, after a while, they would also refuse feed because of the weakness and eventually dehydrate, colic, and die.
