In order to do this:
-- You need to sit up tall and lengthen that spine. Don't lean forward since that will be hinting to him that he should go faster.
-- Proceed in a series of "half-halts" in rhythm with your horse's strides. Don't keep constant pressure on his mouth as that will be sending him mixed messages.
-- Keep pressure on your horse's sides with your legs in order to engage him in keeping speed.
The combination of these commands will tell your horse to keep up with the canter, but to shorten his strides and slow down!

Don't be hard on his mouth, that's probably why he's just stopping. Another thing to bear in mind is to NOT give him a lot pf space to run-up so he can't get such a high speed up. Give him a short approach.
Well before you try to jump him, get him to canter perfectly on the flat. Once you accomplish that canter him over correctly spaced ground poles with a cross rail at the end. When you perfect that set up a jump with a ground pole in front. (leave enough space for the take off). Also, use half-halts or squeeze releases by gently pulling on one rein then release and then the other. You may have to repeat this. I hope I've helped!
work on your canter on the flat, even if its good.
that way youll kno how to settle him once your jumping.
also try trotting him over some low jumps, so that he realizes that he dosent have to rush to get over.

lots of schooling, canter work, lots of circles. try to keep everything the same when your jumping, sit quiet and if you are not happy with the speed of canter when you appoach a jump, quietly circle out, and approach again. try using trotting poles, lots of horses get excited when jumping, trotting poles are a good schooling aid.
