Animal nutritionists usually work for feed companies, research etc
Bloodstock agents buy and trade in high end TB's, buying horses on behalf of clients and syndicates. Must be able to look at a yearling just being walked out and know if it's going to make a return
Stallion manager - usually a man's job, manages the stallions care and breeding schedule
Broodmare manager manages the mares and their followers, breeding schedules etc
Comptroller usu sally does the financial side of managing a racetrack
Commissioner is like the boss at the track and enforces the Jockey Club rules, files reports with them etc
Mutuals - that's betting related.
Foaling crew are people that sit up every night and then call either the breeding manager or broodmare manager when a mare starts to foal. Can pay well for experienced staff but is seasonal
