I am goint to start breaking my horse to a saddle tomorrow or monday...he hates being led out of the feild away from the other horses..what can I give him or do to calm him down and not be all antsy and to be still while being saddled and cinched and led out of the field

Ground training, Ground training, ground training! Get him leading good and tieing away from the others. Groom him and pick up his feet. Try some round pen work. and ground driving him as well. Get him use to a saddle and bridle and noise and everything else. This is a long process it does not happen over night. Your horse has issues and you dont have the knowledge if your asking this question to be tackleing this right now, no offence. If you wont get help then at least make sure someone is there with you and if possible trailer him to an arena. A horse has a comfort zone. Once you lead him out of the pasture he is out of his comfort zone but can still see,smell and hear it. IF youtrailer to an arena then "you" are the new confort zone and he can consentrate on you. Bring another horse with him.
If he won't behave when taken away from the other horses, then you have other issues you need to work on before saddle-breaking him. He should be comfortable going wherever you want him to go, with or without another horse, and not act up or throw a fit. He needs lots of ground work before you even think of starting the saddle breaking part. If you just want him to learn to accept the saddle and girth, then work with him where he is comfortable right now...in the field. But before going any further, he needs a lot more ground training before he is safe to actually break. If you don't know how to remedy these problems, contact a trainer that can help you out.
Remember that he is used to a simple life. Time for new things now. Try not to destroy his confidence in you, but you must take a firm hand. He will struggle for a while and eventually realise that it's not so bad after all. Lots of praise but no treats. That will confuse him. When you unsaddle, groom him well to affirm his affection for you. lol
I don't want to be rude, but if you can't fix this problem, on the ground, should you really be breaking this horse yourself?
