[If jumping hunting] Same thing applies. Works for any kind of spooking, since there are horses out there frightened of certain things (plastic bags, turkeys, etc). Just work with your horse a lot and show them that they are safe with you. I have a very spooky thoroughbred, but once I round pen and get his mind and attention with me, we're good to go. Everytime you are on or working with your horse and it seems they are about to spook, take their mind away from what is bothering them. Turn them, take them in a new direction, just keep their mind with you.

I haven't had any experience hunting from horseback but it would seem to be a risky undertaking at best. Equines are naturally neurotic and nothing can change them from being the way they are.
Try looking in the newspaper. Also look around at horse rescues near you. I look at equine.com. They have great horse selection. My dad would dream of a horse that he could shoot off of!
I have looked at bazillions of horse ads and I have never seen one that specifically said "gun proof".
I think this is a specific kind of desensitizing training you would have to do yourself.
First, look for equine ads where the horse is described as "bombproof". Horses that are already known to be hard to startle will be the best candidates.
