Getting back to the point here. I suppose there could be a better term but unfortunately I have to disagree with "backing"
I'm a backer or a colt backer just sounds as goofy as the reason you want to change it from its original "break".
You could just change your thinking from the person who breaks the horses spirit, or "breaks" the horse to the person WHO GETS HIS BACK BROKE DOING IT:)
Sorry, I have no suggestions as to your exact question.
I think it was a cowboy term. We use "started", "green or unfinished", and "finished" here. Never try to "break", as it feels like it means to break the spirit to me. In cowboy days, they took a wild bunch and made them rideable in literally no time. They didn't feel they had much choice, unlike the vacqueros who took the time to properly bridle their mounts from the bosal through the spade. I am also not sure what it was called, say in the Roman times or what the School of Riding uses off hand, but I doubt it was "break". This is a good question, btw!
