The other thing I would check out is if he has a pain issue of some sort. Does his saddle fit him correctly? Is there something about hacking that makes him hurt? Does he have any problems with his back, legs, or hooves?
Not knowing any more than I do about your horse, I would suggest you get him evaluated by your vet and a good trainer.

Two of our horses have been similar---we switched to hackamores and it's alot better now--they had sensitive teeth and noses. But after we switched they didn't do that anymore. You should try it.

Circles, while you are on him, pull reins right all the way around, you'll end up where you left off but they don't seem to know that. Stay on him when he bucks, stand in the stirrups if you have to, he's testing you. When he walks backwards, stop him with a circle and see what he does then.(hackamore is a good idea)
