I do not think it is safe to eat him because you actually don't know if he had any desease or infaction of any kind,unless a vetinary came to survey him and make sure that the meat is in good condition for a human to consume.

i dont know about being safe. you would have to ask your local health dept.

but it would be better if you just buried him and said a few words . you did have him for a long time. it wasnt like he was a cow or a pig, those you would eat, but not a donkey
