Answers:because it sees this big creature coming towards it. it is a natural instinct for them to flee when they feel threatened. once you have it in your hands and they see that you mean them no harm then they settle down.
He might still have alittle bit of his wild instincts in him when you go to get him. It's the fight or flight response. And when you hold him he could be "playing dead" or just laying still trying to get you to think he's useless and not worth holding. My iguana does the same thing!

Sounds like it was not held enough when it was very young to adjust to human contact. I once owned a juvenille iguana, that was neglected as a baby, and there was really no way to train him to be held, and i ended up giving him away.
