They are also alot easier to care for.

Because a rat will cost more since they need a bigger cage.

Rats are much smarter and far more tame. Gerbils can be tamed but require a lot more handling and are often happier just left alone. Rats actually want to be with you. They thrive on human attention. They also live longer.

Both make great pets, but rats tend to be somewhat more friendly and playful (especially the females--males tend to be more laid-back, not that it's a bad thing). Gerbils tend to do best in a 10-or-more gallon-aquarium, while rats are happy in a nice, big wire cage.
