My rat escaped out of my cage once, and it hid behind my fireplace (there was a small area where it could come out on the side) and we placed a humane rat trap there so it had no where to go but there, and the area behind the fireplace.

We put a few PEANUTS in there, and within hours the rat was caught (which had been sneaking around for days)! I often hand-feed my rat peanuts to this day.

Also, you should really try some Yogurt Droppings or something like that, they're a common rodent treat and I remember my hamsters used to go crazy for them, and I've heard rats do the same.
