I hope you are referring to a live trap! Here are some very effective foods for luring rats.
Bacon- it's distinct odor will get any rats attention!
Any rat loves a little peanut butter on a cracker. But be sure to use just a little bit of peanut butter, as rats can choke on it.
If you are referring to a wild rat then make sure you release it near a water source with a few days food left from you- it has been depending on food from your home, and will gradually learn that it has to hunt for food.
If you are trying to trap a pet rat, try putting some of it's droppings along with some food in the trap- as this will make it smell homey, and they will be more likely to enter the trap.
Remember that rats like to travel along a wall, you can tell which wall the rat travels by looking for greasy marks and rat fecal matter. Place the trap in an area along a path that you know the rat uses, otherwise you won't catch anything at all.
Please don't use sticky traps- these cause alot of unnecessary pain to the animal that gets trapped in it. :0)

peanut butter is the best for a trap but a better way to get rid of rats is put some instant mash potatoes in a bowl (dry) then right next to it a bowl of water place them in a place you see the rat often it will eat the potatoes (they love them) it'll make them thirsty then they drink the water then the freeze dryed spuds expand (instantly) killing him right there next to the bowls ( rodents cant relies gas in essence blowing up his stomach
