he also could be diabetic (although this is more common with dwarfs, it is possible to be an issue with teddy bears as well) I'd suggest a sugar free diet because diabetes in hamsters can cause obesity, however if your hamster isn't already diabetic then he is more at risk because of his extra weight:

also, how old is he? If he is nearing puberty then he may start to have odd behaviors during the transition, most male hamsters will start to sleep more and seem less interested in things (almost depressed), soon their GIGANTIC genitals will pop out (not kidding, it's common for people to worry that the genitals are a tumor because they seem so over-sized), and soon after his manner will return to normal:

as far as biting...gentle handling is not all he needs: it can be hard to tame a hamster (be glad you have a teddy bear because dwarfs are the worst to tame, and European black bear hamsters tend to be the easiest to tame...teddy bears are similar to Europeans, so, although they are not the easiest to tame, they are still easier than the dwarfs!) in order to tame a hamster you must have time and patience and an understanding of what you're doing, here's a great link to explain how to tame a hamster, my hamsters are so well tamed that if I put my hand in the cage (even without food) they will climb right on to my palm, however I've had many hamsters before and I took almost two months taming them to be this way:
