Would a pet mouse be able to get out of a 10 gallon tank without a cover

They won't be able to jump out, but if you have something close to the side, like a hanging water bottle, or a toy, they can climb out.
Keep all toys and hides in the center, and don't use a hanging water bottle.

Wild mice can get IN to an uncovered cage. It's nothing on you, or you housekeeping skills, sometimes the little buggers turn up in the strangest places. Wild mice are a danger to your pet, and they will steal food.
Get a cover. Mice are springy, quick creatures. And make sure your cage is properly ventilated.

It's best to get a cover so your mice can't escape (My mouse DID escape with no cover on the top of the tank!).
