Sure. Just try not to startle them. Start by talking to them and see if that wakes them up. If not, open the door of the cage and poke around their food or rattle the water bottle a bit to wake them up. Give them a minute or two to be 'awake' before you pick them up. A startled hamster usually bites because it's scared and unsure of what's going on.
